Yeast bakery in East London, specialises in handcrafted viennoiserie. Originally catering to hotels, delis and boutiques, the bakery, born out of lockdown, now opens its doors to the public on selected days.
For croissant enthusiasts, a diverse array of flaked and layered dough options await, complemented by fresh bread and a small but crafted brunch menu on weekends. Situated in a contemporary building near the waterfront, the unassuming interior belies the hidden treasures within. Upon entering, the fusion of industrial elements, high ceiling, black metal, and wood blends with modern pastel pinks and blues, embodying the current aesthetic. Yeast have avoided the trap of filling the space with so many tables you can barely move but just enough that there is a lovely atmosphere for a Saturday morning.
Classic offerings like Pain au Chocolat, Pain aux Raisins, and Almond Croissant are available. However, my curiosity led me to their signature creations. The salted caramel and cinnamon-filled brioche Feuilletée, a tower of sweet brioche with a rich vanilla and cinnamon pastry cream, delivered an indulgent experience, it was sweet - so not for the faint hearted but a well-salted salted caramel drizzle helped cut through some of the richness. Equally enticing was the raspberry and custard red berry crumble croissant swirl, where the tartness of the raspberry jam complemented the smooth, not overly sweet custard. Both were well filled.
Opting for a chai latte, I encountered the only hiccup of my trip to Yeast - it lacked sweetness and the expected spice profile, resembling little more than warm milk with a sprinkle of cinnamon. Nevertheless, the pastries stole the show with their freshness, sweetness, and flakiness.
At £16.15 in total, the visit may not be the most budget-friendly, but the bakery has a pleasant ambiance, and the friendly staff contribute to a neighbourhood café/bakery vibe. While the chai disappointed, I'm eager to return for the Feuilletée and explore their freshly baked bread options.
In conclusion, if you find yourself in Hackney and haven't experienced Yeast Bakery, don't hesitate - you won't be disappointed.
